Favorite Breakfast

I may have waxed poetic about this before, but breakfast is my favorite meal of the day. I think a lot of people discount breakfast because breakfast = waking up = the whole work day ahead of you = bleh. But for me, breakfast really feels like my own free time and I think this is because it is the time just before my preset obligations occur, rather than any self-inflicted obligations. In other words, I’m already going to work and don’t have to think about that as opposed to motivating myself to get the dry cleaning or pick up milk or go to the gym or even cook dinner. I often joke that I could be a British farmer and be quite happy with the food, since the Brit style is a large breakfast, smaller lunch, and tiny supper (I’d be a lousy Italian–an espresso and biscuit downed in 30 seconds? No thank you).

Not to mention breakfast fare is good. Lip-smacking, finger-licking, mouth-watering good, without a whole lot of fuss (unless you prefer it that way and make hollandaise every morning). You can get all your flavorspots hit at one meal: a piece of buttered toast with a little sugar and cinnamon sprinkled on top next to lean salty Canadian bacon; creamy yogurt with berries; eggs Mexicana style and smothered in warm salsa; oatmeal with your favorite trimmings…All made amidst the smell of brewing coffee, your savior (well, mine at least) the morning. To this day, regardless of whether I am watching what I eat or on vacation, I will not suffer anything but real half-and-half in my coffee. If you put cream in coffee, you really do soften and enhance its taste; nonfat milk is the equivalent of diluting it with more water. My friend who’s recently lost a whopping 60 pounds agreed, dumping no less than 4 creamers in his coffee as he said it.

My point is, if there’s one meal that I think deserves some indulgence, it’s breakfast. And by “indulgence” I don’t mean endless mornings of donut french toast or eggs benedict, but the sort of which you find a happy medium between good for the body and good for the soul–like when grandma used to make you oatmeal (body happy) but put a whole crumbly bowl of brown sugar in front of you too (happy, happy).  Avocado chimichurri on toast is one such favorite of mine. Happy for the body is the heart healthy avocado and olive oil, with monounsaturated fats that help heart health and cholesterol levels and will keep you satiated; happy for the soul is a little white flour in the bread (although you could certainly go healthier and eat it on sprouted grain or even alone) and the fact that it tastes freakin’ amazing.

Truly is my favorite breakfast. Or at least one of them.

Cold Spicy Sai Fun Noodle Salad

It's very easy to "wing" sai fun noodles and to throw them together in a stir fry or hot soup. But here's a recipe for enjoying them cold.
1 6-ounce package dried bean thread noodles (saifun)
6 T. vegetable oil
2 skinless boneless chicken breast halves, finely chopped
18 uncooked large shrimp, peeled, deveined, coarsely chopped
15 garlic cloves, minced
1/2 c. chopped green onions
1/2 c. chopped fresh cilantro
3 T. chopped shallots
3 T. Thai fish sauce (nam pla)*
3 T. fresh lime juice
2 1/2 t. minced seeded Thai chilies* or serrano chilies

Place noodles in large bowl. Cover with cold water; let stand until noodles begin to soften, about 5 minutes. Drain. Transfer to large pot of boiling water; cook until just tender and pliable, about 3 minutes. Drain. Rinse with cold water; drain.

Heat 2 tablespoons oil in heavy large skillet over medium-high heat. Add chicken and shrimp; stir-fry until cooked, about 4 minutes. Transfer to large bowl. Heat 4 tablespoons oil in same skillet over medium heat. Add garlic; cook until fragrant, about 2 minutes. Add garlic-oil mixture to bowl with chicken and shrimp; cool.

Add noodles, green onions and remaining ingredients to bowl. Toss to blend. Season with salt and pepper.
